Coffee is a fruit. That single fact explains almost everything about processing: the step between picking a ripe cherry and shipping a green bean, and the word on the bag ("washed," "natural," "honey") that changes the taste in your cup more than almost anything except the variety itself.
We watch this work happen every harvest here in Tierras Altas, so let us explain it the way we'd explain it at the roastery: no jargon, one table, and a clear answer to "which should I buy?"
First, what's actually inside a coffee cherry
A coffee cherry is a small stone fruit. From outside in: skin, sweet pulp, a sticky layer called mucilage, a papery parchment shell, and finally the two seeds we call beans. Processing is simply the question of how much of that fruit stays on the seed while it dries, and for how long.
Fruit is sugar and moisture, and sugar plus moisture means fermentation. Microbes begin eating the pulp the moment the cherry is picked. Managed well, that fermentation creates flavor. Managed badly, it creates vinegar. Every method below is a different strategy for steering it.
Washed: the clean window
In the washed (or "wet") process, the skin and pulp are removed within hours of picking. The beans, still coated in mucilage, sit in fermentation tanks until that sticky layer breaks down, typically twelve to seventy-two hours, then get washed clean and dried in parchment on raised beds or patios.
Because the fruit comes off early, what you taste is mostly the seed itself: the variety, the soil, the altitude. Washed coffees tend to be clean, bright, and articulate, with sparkling acidity and nothing to hide behind. It is the most demanding process to do well, since it needs water, infrastructure, and precise timing, and it's the standard for coffees that want to show off their genetics. There's a reason the record-breaking Geisha lots are so often washed: when the variety already tastes of jasmine and bergamot, you want a clear window, not a stained-glass one.
Natural: the whole-fruit gamble
The natural (or "dry") process is the oldest method on earth: dry the entire cherry, fruit and all, then hull off the shriveled skin weeks later. The seed spends its whole drying life in contact with fermenting pulp, absorbing sugars and fruit compounds as it goes.
Done well, naturals are lush and loud: berries, tropical fruit, wine, a heavier body and rounder sweetness. Done carelessly, they tip into boozy, over-fermented territory. The method needs little water but a lot of vigilance: cherries must be turned constantly on drying beds for two to four weeks, and one rainy afternoon can ruin a lot. In our climate, where harvest overlaps with the tail of the rains, a clean natural is a genuine achievement.
It's worth saying that naturals carried a stigma for decades. They were the default in places without water infrastructure, and sloppy ones gave the method a reputation for dirtiness. The modern specialty natural, dried slowly on raised beds with obsessive turning and sorting, is a different animal entirely, and some of the most celebrated lots in recent Panamanian competition history have been naturals.
Honey: the dial in between
The honey process removes the skin but leaves some or all of the mucilage (the "honey") on the bean while it dries. It's a dial, not a switch. Producers talk about white, yellow, red, and black honey depending on how much mucilage stays and how the drying is managed. More mucilage and slower drying push the cup toward natural territory; less push it toward washed.
Expect syrupy sweetness with more clarity than a natural, a compromise in the best sense. It emerged in Central America partly as a water-saving adaptation, and it rewards producers with excellent drying control.
Anaerobic and the experimental frontier
The newest family of methods ferments cherries or depulped beans in sealed, oxygen-free tanks, where a different cast of microbes produces different flavor compounds: sometimes cinnamon-like spice, sometimes intense candied fruit. Related experiments include carbonic maceration, borrowed from winemaking.
These coffees can be thrilling and can also taste more of process than of place. Our own bias, honestly held: we're most interested in methods that amplify what the farm and variety already are. But a well-executed anaerobic lot from a great estate is nothing to sneer at.

There is no "best" process, only the best process for what you want tonight. If you love clarity and florals, start washed. If you drink coffee for sweetness and fruit, start natural.
